These flourless peanut butter cookies are the bee’s knees. They are easy to make (4 ingredients!), crumbly, flavourful and they melt right in your mouth. They remind me of those almond cookies we used to have for Chinese New Years, and I think I just might go buy a jar of almond butter and make me some soon.
[The first time I made these, the cookies really spread and got really hard and chewy, probably because the peanut butter I used was old (and thus, pretty dry) and I overbaked them a little. The second time though, was perfection. ]
