Bought these delicious looking grapefruits from Berkeley Bowl yesterday. I personally love the bittersweet taste of grapefruit, probably attributed to eating grapefruit halves with sugar for breakfast as a child (it was my mom’s diet food). So I used a tried and true lemon vanilla cupcake recipe and subbed in grapefruit zest and juice instead. These little cupkins (somewhat of a hybrid between muffins and cupcakes) baked to a nice golden brown and tasted like an airier version of citrusy pound cake, although the grapefruit taste was much less distinct than I’d like. Next time, perhaps a couple teaspoons more grapefruit zest will do the trick.
