The housemates and I made a delicious veggie lasagna yesterday. And for dessert, we had L.’s rocky road cookies with ice cream and these strawberry stacks. They were originally intended to be strawberry white chocolate cupcakes but while I was caramelizing pecans for our salad, I left them too long in the oven and the bottoms burned, which really aggravated me. I hate burning things so much! I wanted to toss them into the garbage but I had to resist the urge because food waste feels so wrong to me. But alas, an epiphany struck! So I cut the burnt bottoms off, sliced up the rest of the cupcake and stacked them with some good ol’ white chocolate buttercream (with fresh strawberries!) thrown in for good measure. And there you have it!
