margarita cupcakes

For our last in-house dinner, we had a massive fiesta with sangria (which might be one of my favourite beverages), a variety of Mexican fare (including potato chorizo tacos, which I’ll post about later) and mango margarita cupcakes. These cupcakes were altered, adapted, added, subtracted and messed with to no end, and that probably explains why they were very forgettable in taste – neither tasting like mangoes or limes. All I remember is that the frosting (a mango buttercream) and the little diced mangoes were delicious and that pretty much made up for the uninspired cake.
