Mini pancake stacks are awesome! They’re the perfect dessert to revert to when you want something sweet and sort of pretty on the fly. I first made these back in May with buttermilk pancakes, cherries and chocolate. It was also the first time I attempted a eggless pancake, which was surprisingly delicious! Most recently, I made banana pancakes and stacked them with banana slices and chocolate. These are totally awesome for experimentation with flavours and super easily adaptable to whatever ingredients you have available.
