About a month ago, I went into a little shortbread craze with these little shortbreads and then for Y&P’s wedding, where we baked about 28 dozen cookies (more on that later). I baked a pretty sizeable batch of these, some of which we sent in a package to Steve’s sister. The ones with trees iced on them are toasted coconut and lime, and the ones with iced strawberries on them are, well, strawberry (: They were done using two different recipes and I’ve firmly decided that I prefer the recipe for the coconut lime shortbread (which is the recipe I ultimately used for the wedding). It’s just the right amount of sandy, flaky, salty and sweet. And they do look pretty cute, no?
