Last weekend at Steve’s parent’s home, I made a dinner of salmon baked with fingerling potatoes, carrots, red peppers, in a butter + sparkling wine sauce from a recipe book Steve’s mum had. It was amazing!

Basically, cut the potatoes up into halves and blanch them and julienne carrots and red peppers. Lay the potatoes out on the bottom third of a sheet of parchment paper, then stack the carrots and red peppers on top. Put a fillet of salmon on top of that and season with salt and pepper. Then, put lemon sections, butter and chives (oh, the yummyness of the home grown chives we used!) on top of the salmon and drizzle sparkling wine over. Then wrap it all up and bake in the parchment paper!  Pretty easy but very delicious!
