Last night, I made some stuffed baked peppers, which are super easy to make. Then, I followed up with nutella banana turnovers, which are also super easy to make. See the trend here? Simple and quick are key on weeknights, especially after hours of work. And then I experimented with my hair whilst watching TV (the picture’s kind of blurry, but it’s basically a diagonal french braid… I sort of got lazy and kind of just balled up the end there, ooops).

{Stuffed baked peppers} You need: 3 peppers (green, red, yellow, orange, you pick), 1/2 cup couscous, shredded cheese (I used cheddar but mozerella or parmesan would work well too), 1 cup mushrooms (I used shitake) chopped, 1 clove garlic minced, olive oil, lemon juice, 1 small onion diced, 1 tomato diced, parsely chopped (you can sub with basil or rosemary or coriander too).

  1. Perheat oven to 190C.
  2. Prepare couscous (I like to do it the easy way by pouring 1/2 cup water into 1/2 cup couscous, cover and let sit)
  3. Sautee onions in olive oil until tender, add garlic, tomatoes and mushrooms
  4. Fluff couscous, add into sautee mix, drizzle more olive oil and lemon juice, add parsley, cook for a few minutes.
  5. Meanwhile, brush peppers with olive oil and stand on baking sheet.
  6. Take off heat, add cheese and immediately stuff into peppers.
  7. Bake for 20 minutes.

{Nutella banana turnovers} You need: puff pastry, nutella, 1 banana sliced, 1 egg.

  1.  Preheat oven to 200C.
  2. Flour surface, roll out puff pastry (some pastries come in sheets so you don’t have to roll I think). Cut puff pastry into squares.
  3. Place 1 slice of banana on pastry square, scoop 1 tbsp of nutella on top. [Note: how much you fill the squares really depends on how big you cut them… you just need to leave enough space to fold & close them]
  4. Fold the pastry across diagonally to make triangles and seal the edges tight by pressing down with a fork.
  5. Make egg wash (I used water+egg yolk) and brush it over the triangles
  6. Bake for 15 – 2o mins or until golden brown
