For dinner last night, Steve and I made zucchini fritters and whole wheat couscous with green peppers, tomatoes, peas and garlic. Ours don’t look as nice as Deb’s but still, they taste mighty fine! I overfried them a little in my attempt to make them extra crisp, but they were still pretty good – just extra crunchy. Next time, we’ll definitely remember to get stuff for the sour cream accompaniment. And, I will control my crisping urge.

p/s squeezing zucchini like a mop with bare hands is pretty darn hilarious.
