For dinner last night, we had vegetarian shepherd’s pie – filled with steamed carrots, peas, broccoli, sauteed leeks & polenta in a creamy silken tofu & chipotle sauce and then covered with buttery mashed potatoes. It was served with a side of homemade guacamole & tortilla chips. I could not for the life of me get the potatoes to brown on top… why doesn’t our oven have a broil function!? Anyway, that’s my excuse for the crappy picture… it doesn’t look so great but it actually tastes pretty good. Better photographic luck next time, huh?
