These cupcakes are a nice little surprise – all crunchy on the outside and chewy goodness on the inside. They are perfect if you like your desserts not so sweet, although you could probably jazz it up with some icing. Also, they’re super easy to make!

I followed this recipe (see how hers are so perfectly green?). First, preheat oven to 190 degrees Celsius (375 Fahrenheit). Fill cupcake tray with liners. Then, whisk together 1lb (abt 3.5 cupcs) of glutinous rice flour, 1 1/2 cup brown sugar, 1 tsp baking powder, 2 tsp green tea/matcha powder in a bowl. In another bowl, combine and mix together 3 eggs, 1 1/2 cup milk, 3/4 cup oil.

Next, pour dry ingredients into wet ingredients and whisk until just combined. Spoon batter into liners until 3/4 full. Put into oven and bake for 30 minutes. 

These came out all toasty and delicious and very brown on the outsides. Next time, I’ll add more green tea for a more concentrated flavour (I was a little scared by a previous green tea mishap) and colour. Happy snacking!
