This salad is a mixture of pretty much everything I love – avocados, basil, quinoa, lentils and lime juice. You don’t have to measure out ingredients or anything, just put in however much of everything you want. How’s that for easy? I cooked about 1/3 cup of quinoa, used about 1/2 cup of lentils, half an avocado cubed, two sprigs of basil, juice from half a lime, some olive oil, salt & pepper (this will make two good portions) – all mixed up for ideal scrumptious salad consumption.

Eat it alone or as a side – I made an easy cheesy egg quesidilla to go with. You could also have it with a sandwich or soup or toss with some mixed greens for a hearty salad.

p/s Yoghurt wanted no part in the lentil salad, she was too preoccupied putting her whiny face on so I would get her squeaky ball for her. What a suck :)
