Epic birthday cake? Check. This is chocolate cake… correction: this is chocolate layer cake with chocolate mousse filling and chocolate icing. It is rich, crumbly, decadent and delicious. 

And this mousse?

It’s Heston Blumenthal’s genius mousse (see the video below). Only two ingredients, chocolate and water. That’s right, water. It’s easy. You use some melt some good chocolate with some water and then, put it on a bed of ice and whisk like you’ve never whisked before. I actually enlisted the help of a trusty hand mixer in the first few minutes because my arms are weak like that (when the mixture starts getting stiff, you should use a hand whisk instead, since overbeating is just a matter of seconds on the hand mixer at that stage). Tada! Stable, chocolatey mousse.
