Can I just tell you how much I love fish tacos? Especially in a soft shell, with guacamole and fresh bean salsa – easy and so delicious!
You cook the fish however you wish (we like to grill ours in the oven, but you can barbecue it, fry it…), then while it’s cooking, you can dice up some onions, garlic, tomatoes, red peppers and add it to a mixture of black beans and corn to make the bean salsa, and then add salt and pepper, chillies (if you want it spicy), lime juice…. and cilantro, I think cilantro is the key, really. Then you make the guac with an avocado, garlic, onion, salt & pepper and lime juice, mash them all together (or put them in a food processor if you have one handy) to your desired consistency… I personally like having chunks of avocado in my guacamole. And oh, you can add some mango to the mix too if you’re feeling somewhat adventurous there.
Everything that follows is simply an assembly line. Warm the taco ( we use whole wheat tortillas), get some of every component on there (don’t forget the fish!), add some shredded cheese and some hot sauce – you can also put in some shredded lettuce or spinach for some leafy goodness – and start chomping away.
